Shahi vegetable kurma

shahi vegetable kurma
I tried this as per the cook book of Ms.Mallika badrinath and it came out very well.

Ingredients:
Diced vegetables: Potatoes, carrots, beans, turnip, peas - 3 cups
Red chilli powder - 1tsp
finely cut onions - 1/2 cup
Ginger garlic paste - 1 tsp
Whipped cream (I used curd) - 1 cup
Bay leaf - 1
Cinnamon, clove - 3 in each


Soak the following in milk and grind it
Almonds - 10
Cashewnuts - 10
Poppy seeds - 1 tsp
cardamom - 3

METHOD:
Steam cook diced vegetables in pressure cooker.
Heat butter, ghee in a frying pan and add garam masala spices, grated onions, ginger garlic paste.
Fry till golden brown, add chilli powder, whipped thick curds and salt.
Stir in medium flame till ghee floats on top.
Add ground paste, cooked vegetables with enough water.
Cook till kurma becomes thick.
Serve hot with chappathi/nan.
